Martedì 1 dicembre al Ristorante Ganzo tutto questo sarà possibile...&lt;br /&gt;&lt;br /&gt;L'idea porta la firma dello staff di Ganzo, locale di Via de' Macci 85/R a Firenze, che ha apparecchiato una cena davvero da non perdere per i palati più curiosi e gli amanti della buona tavola. Otto giovani chef si daranno appuntamento nelle cucine del locale, proponendo in altrettante portate un intrigante percorso del gusto. Le radici toscane, l'estro, il divertimento, il fascino di sapori lontani, il gioco con temperature e consistenze: il tutto si fonderà in un'esperienza gustativa a dir poco coinvolgente, che non capita tutti i giorni.. &lt;br /&gt;&lt;br /&gt;E non è un caso se proprio al Ganzo è possibile realizzare un appuntamento di questo genere, mettendo fianco a fianco in cucina diversi chef affermati. Il locale non è soltanto un ristorante, ma piuttosto un crocevia culturale enogastronomico e artistico. Nato dall'incontro di due dinamiche realtà come Apicius, scuola Internazionale di Hospitality e il Fua, Florence University of the Art, istituto da sempre legato all'arte nella sua accezione più ampia, il Ganzo riunisce gli studenti e lo staff di Apicius e Fua, fiorentini, stranieri, artisti, scrittori, creatori dando vita ad un creativo viaggio di scambio rivolto ad unire la cultura e la comunità fiorentina con quella internazionale.&lt;br /&gt;&lt;br /&gt;Il Ganzo è dunque un ristorante a tempo pieno, sia per pranzi, cene, aperitivi o un semplice te' delle cinque, ma anche uno spazio artistico dedicato alla fotografia, alla pittura, alle nuove tecnologie, al cinema e alla lettura.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Questo il menu della serata composto dall'aperitivo a buffet (inizio ore 20.00) e da un menu di otto portate (inizio cena ore 21.00). Di Chiara Tacconi</title><content type='html'>A pranzo fra i tetti di Firenze&lt;br /&gt;Di Chiara Tacconi (del 05/06/2008 @ 11:42:50, in locali, linkato 164 volte)&lt;br /&gt;&lt;br /&gt;Da Ganzo puoi pranzare fra i tetti di Firenze. Ci si arrampica solo di qualche metro, ma quanto basta per trovarsi in una insolita atmosfera raccolta tra abbaini, tegole, terrazzi, panni stesi. A me è toccato il giorno in cui i vicini avevano fatto la lavatrice dei jeans.&lt;br /&gt;&lt;br /&gt;Ganzo è tanti locali in uno e tante cose insieme. Se all’atmosfera bohemienne della terrazza preferisci gli interni, ecco gli arredi minimal-design, le luci giuste, le belle foto giganti degli occhi di chi lavora qui. È aperto da un paio di mesi in via de’ Macci, ad arricchire quel concentrato di enogastronomia rappresentato da Cibreo e derivati, mercato, Pizzaiuolo, trippaio, gastronomie golose. È un ristorante fiorentino nell’anima e nei piatti, nato dalla costola di Apicius, la bella scuola internazionale di cucina della vulcanica Gabriella Ganugi, “managerizzato” da Massimo Coppetti, e in cucina c’è Pierluigi Campi.&lt;br /&gt;&lt;br /&gt;Poi ci sono loro, gli studenti intercontinentali di Apicius che qui fanno pratica ai fornelli e in sala, con i sorrisi larghi degli americani o i modi fini degli orientali, e si parla più inglese che italiano. Perfino il menu è un’occasione di studio e pratica, ci sono le foto del corso di food style. Il risultato è gradevole, sa di nuovo, anche nella reinterpretazione dei piatti toscani o internazionali.&lt;br /&gt;&lt;br /&gt;Niente recensione perché eravamo ospiti, abbiamo ragionato sulla stagionalità di un prosciutto e melone (popone!) che gli studenti volevano mettere troppo presto nel menu, abbiamo assaggiato “main course” davvero buoni come gli involtini accompagnati da carciofi e riso e il maiale all’arancia.&lt;br /&gt;&lt;br /&gt;A pranzo con soli 10 euro puoi mangiare un antipasto e una portata a scelta, acqua e caffè compresi.&lt;br /&gt;Ecco il menu di questa settimana per il pranzo:&lt;br /&gt;Antipasti: fettunta con melanzane e scamorza, filetti di pollo su insalatina.&lt;br /&gt;Main course  : pappa al pomodoro tiepida e ricotta, risotto con inzimino di calamari, braciola arrosto di manzo servita con polenta fritta, insalatona greca, insalatona Nizzarda, quiche di spinaci e funghi, frittata di fagiolini.&lt;br /&gt;&lt;br /&gt;Per le recensioni della cena rimando a Sabino e a Repubblica Firenze (anche sul blog dello chef ).&lt;br /&gt;&lt;br /&gt;Ganzo, via dei Macci 85r, tel. 055 241076.&lt;br /&gt;Aperto a pranzo, all'ora dell'aperitivo e a cena dal lunedì al venerdì, chiuso il sabato e la domenica. Il punto di partenza è una scuola di cucina, che ha messo tra i tavoli e ai fornelli (e in certe stanze pure alle pareti, grazie a foto giganti) i suoi studenti, così fanno pratica per davvero.&lt;br /&gt;&lt;br /&gt;L´atmosfera è giocoforza internazional-informale, con il giovane cameriere statunitense che ti raccontano il suo progetto di lavorare nei ristoranti di San Francisco («i migliori d´America»).&lt;br /&gt;&lt;br /&gt;Da Ganzo si va per mangiare ma anche per fare l´aperitivo, magari nello spazio all´aperto tra la prima sala, dal lato dell´ingresso sulla strada, e la seconda che si trova sopra la cucina. Il locale è chiuso il sabato e la domenica, giorni in cui può essere prenotato per fare feste private.&lt;br /&gt;&lt;br /&gt;Si tratta di un club, va fatta la tessera (Acli) da 9 euro, ma 5 possono essere recuperati in drink.&lt;br /&gt;&lt;br /&gt;La cucina è alla ricerca dell´originalità, e in qualche occasione coglie nel segno. Certo, la tartara di tonno tra gli antipasti è vista e rivista ma qui funziona, grazie all´avocado e ai cipollotti. Meglio comunque le capesante con i cavoletti di Bruxelles o la guancia di vitello con salsa al porto e spinaci.&lt;br /&gt;&lt;br /&gt;Il menu non è esteso e alterna piatti di terra e di mare. I dolci sono buonissimi. Magari, vista l´impostazione del locale verso una clientela giovane, le porzioni potrebbero essere un po´ più abbondanti.&lt;br /&gt;&lt;br /&gt;Per sfamarsi è necessario prendere un menu completo, antipasto-primo-secondo-dolce, cosa che fa sì assaggiare più piatti ma anche spendere di più, sui 35-40 euro. A pranzo menu ridotto come i prezzi. Questa volta ha superato sè stesso: mi ha pure mandato le foto! Ecco la sua recensione:&lt;br /&gt;&lt;br /&gt;Complice la 'soffiata' del mio amico chef, responsabile della cucina, vado a provare un nuovo ristorante.&lt;br /&gt;Si chiama GANZO ed è in via de macci 85/r (quindi facilmente raggiungibile dai viali e dal parcheggio sotterraneo di sant'ambrogio). La particolarità di questo ristorante (che è un circolo culturale per cui la prima volta bisogna sottoscrivere una tessera - 9 euro - ma ti regalano un tagliando 'bevuta' da 5 euro), aperto a pranzo (menù veloce da lavoro) ed a cena (altro chef, ovvero il mio amico, altra tipologia di piatti) dal lunedì al venerdì, è che in sala ed in cucina spadroneggiano gli allievi - stranieri - di una scuola di cucina fiorentina: si parla un pò italiano e soprattutto inglese! Ambiente moderno/minimalista, da una parete la gigantografia dello chef che ti scruta attentamente ....&lt;br /&gt;Si inizia con un pre-antipasto (vedi foto), uguale per tutti, e poi si parte con quello che avevamo ordinato: Tartara di tonno al lime, avocados e cipollotti in agrodolce (un piatto oramai comune, ma c'è chi riesce a farlo male, non è il caso però del nostro chef: molto apprezzata da tutti quelli che l'hanno scelta), Bocconcino fritto di formaggio caprino con olive liguri e nocciole (ordinario), Triglia di scoglio in crosta di mandorle, spuma di patata ed escabeche di aceto di xeres (questo l'ho preso io: ottimo, delicatissima la spuma di patata). A seguire i primi piatti: molto buoni i Paccheri con polpo grigliato mantecati con bottarga di muggine, in particolare si sente la maestria nel presentare un polpo morbido come deve essere ma con una leggera grigliatura che gli conferisce un tocco di raffinatezza molto particolare;&lt;br /&gt;Cappelletti di burrata con salsa al radicchio e cipolle stufate (vedi foto) hanno lasciato un pò perplessi i commensali, a mio giudizio la burrata non è propriamente quella più giusta, ne ho provate di pugliesi originali, questa mi sembrava somigliasse più ad una scamorza, ottima comunque la pasta fatta a mano del cappelletto.&lt;br /&gt;&lt;br /&gt;La fritturella di pesce fatta a modino con la salsa tartara era discreta, ottimo come sempre il maialino di latte croccante glassato, patate novelle al rosmarino e salsa alle arance; il piatto più riuscito della serata erano però le Cappesante e cavoletti di bruxelles caramellati con riduzione tartufata al balsamico (assaggiate ma non scelte da me, io avevo preso la fritturella di pesce): ottima la cottura, perfettamente equilibrato il gusto del tartufo, un piatto veramente eccellente. risale                       alla prima metà del 200 ed è   situato                       nella campagna toscana nel comune di Certaldo a 30 minuti                       da Firenze, e da Siena, a soli 20 minuti da San Gimignano,                   ben collegato da strade e autostrade.                                     &lt;/p&gt;&lt;p align="justify"&gt;“I più antichi                       abitatori di Tavolese per quanto sappiamo furono i Farinata                       degli Uberti attenti a quel forte d’animo e d’ingegno                       che seppe nel secolo XIII levar Patria dalla ruina minacciata                     dai Ghibellini”.&lt;br /&gt;                  Dai Farinata il castello passò alla                       famiglia Dell’Asino; capostipite Pietro detto Asino,                       fratello del medesimo Farinata e capitano di Manfredi re                       di Napoli.&lt;br /&gt;                    Arrivarono poi i Canigiani, potente famiglia                       da cui discese per parte di madre nientemeno che il Petrarca.                       Passò quindi                     ai Giugni, quindi ai Conti Capponi, ultimi eredi del castello.                                       &lt;/p&gt;&lt;p align="justify"&gt;Oggi                       dopo un appassionato lavoro di restauro ha riacquistato                       la sua bellezza originale ed è stato trasformato                       in un luogo destinato ad un turismo che si vuole regalare                       momenti di relax e che sappia apprezzare il connubio tra                 arte, ambiente storia e enogastronomia.&lt;/p&gt;&lt;p align="justify"&gt;&lt;a onblur="try
